Soy sauce and Any Citrus.

Do you have a guilty food pleasure?

Authentic Lamb shish kebab with yoghurt and mint. 

Tell us about your first food memory?

Kyushu style Tonkotsu Ramen when I was in Fukuoka, Japan. 

What’s your favourite Scottish restaurant, deli or cafe (apart from your own)?

Henderson’s of Edinburgh (re-opening soon).

What would be your last supper?

Fluffy Japanese rice and assorted sashimi(Hamachi-yellow tail, fresh scallops, squid, Toro tuna)  with yuzu citrus and soy sauce.

Starter or pudding?

Pudding – give me Japanese Crème caramel any time!

Do you have any food hates?

British Pork Pies and Jellied Eel.

What starters, main and dessert would be served at your dream dinner party and who would you invite?

Starter: Fresh Sea Urchin with black caviar.

Main: Kobe Beef teppanyaki with shredded daikon radish and tamari soy sauce, French mustard.

Dessert: Mille Crepe with matcha crème anglaise, British strawberries.

Invitees: Samin Nosrat and Eddie Vedder.

What's your favourite geographical foodie destination?

Middle East.
